The Weather Chef: Three Layer Banana Cake

Welcome to another segment of The Weather Chef.  Thanks for joining us in the Pizazz Performance Kitchen.  Beautiful kitchen for us to work in, of course.  Now we have a great recipe today, but it's going to be a bit of a challenge.  It's a three layer banana cake, but don't worry, it's absolutely delicious because it's my grandmother's recipe, so if it's Granny approved, you know it's going to be good.


Banana Cake Ingredients:

3 CUPS CAKE FLOUR

2 T SODA

1 CUP SHORTENING

2 CUPS SUGAR

¾ CUP MILK

2 EGGS

3 LARGE BANANAS

1) Line the bottom of three 9" round cake pans with wax paper and grease well with shortening.
2) In a mixer, blend shortening, sugar and eggs.  Add milk and bananas.
3) Mix in baking soda and flour.
4) Pour evenly into the cake pans.
5) Bake at 350 degrees for 25 minutes.
6) Let cool completely then frost.


Cream Cheese Frosting Ingredients:

8 OZ. CREAM CHEESE SOFTENED

1 STICK OF BUTTER SOFTENED

1 BOX OF POWERED SUGAR

1 TEASPOON OF VANILLA

1 TEASPOON OF ALMOND FLAVORING

1) Mix until blended.
2) Spread on cooled cake.
3) Serve immediately or refrigerate overnight.  Refrigerating the cake will make it denser, and in my personal opinion, better.
